This is a quick and easy dish I threw together tonight when I suddenly realised I was running very late. Not a true 10 minute meal as it takes a little longer to cook but certainly less than 10 minutes work in the thermomix.
Moroccan Style Vegetable and Couscous
2 tablespoons olive oil 2 onions
2 cloves garlic
1 teaspoon cinnamon
1 teaspoon ground coriander
1 teaspoon cumin
2 lare zucchini
2 tomatoes, roughly chopped
2 cups soaked chickpeas
small handful sultanas
1 cup stock
2/3 cup water 1 cup coucous
To Cook in Thermomix:
Cut onion into quarters and skin garlic. Cut for 10 seconds on speed 7. Add oil and saute at 100 degrees for 2 minutes at speed 1.
Roughly chop zucchini, add to thermomix and chop on speed 7 for 30 seconds, stop and scrape down the sides when necessary until zucchini is mush.
Add all other ingredients except couscous. Cook for 25 minutes at 100 degrees on speed 1. Remove from thermomix and place in bowl. Add couscous and cover. After 5 minutes, fluff with a fork and serve.
To cook conventionally:
Cut onion and garlic finely and saute in a large saucepan. Chop zucchini to mush in food processor. Add all ingredients except couscous to saucepan and gently simmer, stirring occasionally for 20 – 25 minutes or until chickpeas are cooked through. Turn off heat. Add couscous and cover. After 5 minutes, fluff with a fork and serve.
Delicious with nice crusty bread.

I made a very similar quick dinner like this last week. Heated up a barbecue plate on the cooktop and chargrilled some asparagus, capsicum, and red onion (zucchini and mushrooms would be good too but didn’t have any), then tossed in a bowl with some olive oil, garlic, lemon juice, a splash of balsamic vinegar and some ground black pepper. Add a tin of chickpeas and mix together. Served over couscous. Yum.
