It was a coldish and wet day yesterday. Comfort food day. We’ve been having so many salads lately I really wanted a good old vegetable fest.
Vegetable Gratin
2 carrots, thinly sliced
1 sweet potato, thinly sliced
big chunk pumpkin, thinly sliced
3 potatoes, thinly sliced
bunch asparagus, woody ends removed and cut into 1 inch pieces
1 zucchini, thinly sliced
handful mushrooms, thinly sliced
a few good dobs of butter
100g cream
lots of grated parmesan
I didn’t bother peeling any of the vegetables. May as well get that fibre, you can’t even tell it’s there with it thinly sliced. Mix everything together well in a casserole dish reserving some parmesan to scatter on top. Bake in a moderate oven until everything is cooked through and the cheese in top is golden melty and delicious. We ate it with sliced of nice freshly baked bred to mop up any juices.

No, I just sliced them thinly. They cook really quickly that way. Miss you too. Need another good chat soon…preferably with the kids out of the way!
