Melbourne is not a place to cook this week. It reached 43.4 degrees in the city today and 44 degrees i my neck of the woods. That’s around 110 in Farenheit. Admittedly I did get up at 6am to cook some chickpeas I’d had soaking but as it is still 37.4 degrees at 9.30pm, I won’t even be doing that tomorrow. I’ve been making extra salad for the last couple of days and we can live on leftovers tomorrow.
Tonight we had a tuna and chickpea salad. Nice and filling on it’s own and super quick and easy to throw together, especially if you have tinned chickpeas on hand. The ingredients can be varied according to what tins and jars and lurking in your pantry and fridge.When I make salads with a view to leftovers, I only dress individual servings so the remainders don’t go soggy.
Tuna and Chickpea Salad
1 280g tin tuna in springwater
1 400g can chickpeas, drained or 1 1/2 cups soaked and cooked chickpeas
2 tomatoes, diced
1 cucumber, diced
1/2 red onion, diced
1 400g tin artichokes, drained and roughly chopped
3 tablespoons capers
mayonnaise to serve
- Combine in a bowl and toss it all together.
110*F? yeesh. Now’s not the time to be cooking in the kitchen.

It gets better Nate, it’s forecast to be hotter than that today. It was already 100 at 10.30 this morning and we didn’t reach the high yesterday until just after 6pm. Heat doesn’t bother me thank goodness, I’m just hoping the power doesn’t go out!
I made something very similar to this last night. It was a case of throwing stuff I didn’t have to cook into a bowl and hoping for the best. Quite yummy.
The heat doesn’t bother you? That’s lucky. I don’t cope with it. At. All. These temps are thoroughly unbelievable. And I’m stuck for a meal tonight. we may have to resort to guacamole, vegies to dip, and some semblance of a nicoise salad.

Docwitch I think all of Melbourne probably had something similar last night LOL. We’re down to leftover potato salad, leftovers from last night, leftover roast beef. I think I’ll just divide it all up amongst pita bread. Then everyone can gorge on watermelon.
I am as bad with cold as most people are with heat. I can’t handle it. I just hope my por old cat survives the week. She’s almost 17 and refuses to come and hang inside.
