This was actually a quick throw together of some chicken breasts with leftover Morrocan Style Vegetables and Couscous. Very quick and easy and it tasted completely different to it’s previous incarnation. Truth be told, it could have done with a splash of white wine but I didn’t have any.
Creamy chicken, Chickpea and Couscous
Leftover Moroccan Style Vegetables and Couscous
2 chicken breasts cut into bite sized pieces
150ml cream
large dob butter
seasoning
splash of white wine
3 shallots, finely chopped
2 cloves garlic, finely chopped
Lightly saute shallots and garlic. Add chicken and cook through. Add leftover couscous, wine and seasoning and cook through. Serve.
Too easy.
