Day Nine in Sydney and a continuation of Holiday Meal Planning.
Today is all about cleaning out the fridge, using everything up and making sure we have snacks for the car. We’re leaving early tomorrow morning to drive home. I miss my dog, my thermomix and my sewing machine but with the exception of Bronte, this must be the most livable pocket of Sydney.
Meal Plan Day Nine
Breakfast – ham, salami and cheese scrambled eggs wraps
Lunch – counter meal at the local pub. I had the lamb roast. Yum.
Dinner – caramelised onion tart and green salad
Ham and Cheese Scrambled Egg Wraps
These simple little numbers were surprisingly uber good so I thought I’d write them up. Just 2 eggs per person, a couple of slices of leftover ham and salami cut into thin strips, the lastr of the cheese grated. Whisk it all together and scramble. Wrap it up in sorj or mountain bread.
Caramelised Onion Tart
1 kg onions
butter
olive oil
leftover blue cheese
leftover onions
ground black pepper
sprinkle sugar
jar marinated goats feta cubes
shortcrust pastry (although I actually used a couple fo sheets of puff I found in the freezer, shortcrust would be better)
Slowly caramelise sliced onions in butter and olive oil. When they are cooked down to translucent, sprinkle sugar over to and continue cooking until caramelised. Drain onions and combine with chopped blue cheese, feta cubes, pepper and sliced olives. Line pie dish or quiche dish with pastry and fill with onion mixture. Bake in moderate oven for about 25 minutes. Serve at room temperature with green salad.
Snacks for the Road
I’ve packed a cooler bag and my groovy little travel fridge (plugs into a cigarette lighter and our car has one in the boot for such purposes) with lots of snacks to try and keep the Ankle Biters calm on the long drive home.
Ham and Sorj Bread Wraps – 2 slices of ham and 2 slices of sorj bread leftover made 2 wraps which I cut into quarters to be eeked out piece by piece
Grissini
1/2 bag leftover pretzels
1/2 box leftover crackers
2 small bags rice wheels
1 small bag vegie chipe
1 banana
bag of grapes
2 leftover eggs, hardboiled
3 leftover sausages, cooked and sliced longways so I don’t have to worry about choking
That cleaned out all our remaining food nicely and the Ankle Biters will have no problem polishing all that off in the car as well as meals. They’re eating machines. I congratulate myself on efficient, waste free shopping *pats self on back*.
Now to get through the drive with minimal whinging from the Lil Miss. It’s a long haul for a two year old. See you when we get home. I hope you didn’t miss me too much on my bloggin hiatus ; p
