I’m flying by the seat of my pants in the kitchen. No meal plan which is a definite rarity, just a list on the fridge of what I have in the freezer. Lots of odds and ends in the vegie crisper, looking forward to seeing where I get with it all. So, today I found some sourdough pancake batter lurking in the fridge. It didn’t get used on Saturday because the kids had us up at sparrow’s fart so Nic decided we should go out to breakfast. But I digress…
The pancake batter was made into…….pancakes. Creative hey?
Then I made this vegetable filling;
1 zucchini
1 stick celery
a chunk or two of brocolli
1 carrot
1 apple
chunk of pumpkin
1 onion
15 seconds on speed 5 in the thermomix. Which equates to grating or food processing for the thermomixless.
Saute 4 minutes on 100 degrees at speed 1 (or use a frypan)
Added 2/3 cup grated tasty
Added a chunk of blue cheese, maybe a quarter cup worth left over from something else.
Cooked on speed 2 for 10 minutes at 90 degrees (or just cook, stirring until the vegetables are soft)
I put some of the vegetable mix down the middle of each pancake and added a bit more grated tasty cheese. Roll the pancakes up and put them in an ovenproof dish, or just serve them if you’re ready for dinner.
I thought maybe it needed a bit more kick so I made a quick sauce.
2 quartered tomatoes in the thermomix with a dollop of cream
10 seconds on speed 5 (chop up small)
Cook at 80 degrees for 3 minutes on speed 1 (heat through).
I didn’t bother to wash the thermomix to make the sauce, I just let any leftover veg from the filling mix in.
Pour sauce over the top of pancakes and eat. Of course Nic won’t be home for ages so I’ve put them in an oven proof dish to heat up when he gets in.
After all that I had some of the filling leftover so I stirred a lightly beaten egg through that. Then I lined a muffin pan with lightly buttered bread and filled with the vegetable mix. About 20 minutes in a moderate oven and they can go in the freezer to be creche lunches for the kids. I still had a bit of filling leftover and couldn’t be stuffed making more bread cases so I just poured the mix straight into the muffin pans and that worked just as well. Yet more creche food. Huzzah!
