The Bread Winner was not enamoured of this but I’m posting the recipe anyway because the kids and I had seconds and there’s not even enough leftovers for a full lunch. That’s pretty rare for a meatloaf around here.
Thai Meatloaf
400g minced free range pork
tin straw mushrooms
2 teaspoons Thai seasoning
1 1/2 tablespoons Thai green curry paste
2 tablespoons shredded coconut (preservative free)
15ml coconut cream
juice of 1/2 lime
1 chilli
1 splash fish sauce
2 tablespoon Vietnamese mint
2 spring onions chopped
1 cup bread crumbs
2 eggs
Preheat oven to 180 degrees. Mix for 7 seconds on speed 4 in the thermomix or thoroughly combine in food processor. Place in greased loaf pan and cook in moderate oven for approximately 40 minutes
