I picked up a lovely barramundi at the market with vision of cooking it in the varoma. For the thermomix uninitiated, the varoma is the steamer unit that sits on top. It’s pretty fabulous actually, you can cook the entire meal, including a sauce all at the same time. Impressively efficient. So…what exactly to do other than whack the fish in the varoma.

Steamed Barramundi with asparagus and lime hollandaise

1 barramundi, cleaned and scaled
1 clove garlic
Potatoes enough for as many people are you are feeding.
Asparagus or broccoli. Asparagus would be perfect but I don’t have enough left in the garden so it will have to be broccoli because I have some in the fridge. No stuff that, I need asparagus, I’ll go past Superfruit on the way to gym anyway.
4 egg yolks
130g butter
1 lime, juiced
Seasoning
20g water

To Cook in Thermomix:
Thinly slice unpeeled potatoes.
Snap woody ends off asparagus.
Score each side of the fish about three times. Not too deeply. Cut clove of garlic in half and rub over body of fish. Place in varoma with potatoes and asparagus.
Place a couple of cups of water in thermomix bowl and cook for 25 minutes at varoma temperature on speed 1.
Remove varoma and make lime hollandaise. Empty thermomix bowl. Put egg yolks, butter, lime juice and seasoning in thermomix bowl and cook for 4 minutes at 70 degrees in speed 4. Or 20 seconds longer if the butter is chilled.
Serve immediately over fish and asparagus.

Hollandaise sauce with lime juice instead of lemon

To Cook in Oven:
Thinly slice unpeeled potatoes.
Snap woody ends off asparagus.
Score each side of the fish about three times. Not too deeply. Cut clove of garlic in half and rub over body of fish. Place on rack over water in baking dish and cover tightly with foil. Cook in oven preheated to about 180 degrees for 25 – 30 minutes or until fish is cooked through. Steam potato and asparagus on stove top.
Make lime hollandaise. Melt butter in bowl over boiling water. Beat together egg yolks, lime juice and seasoning. Add to melted butter and whisk until thickened.
Serve immediately over fish and asparagus.
