Tuesday and Thursday nights I like something I can cook in batches so I can eat with the kids and go to gym when the bread winner comes home and he still gets a freshly cooked meal.

As usual I’m out of bread so first things first I guess. Need some buns. As usual this is a thermomix recipe, feel free to try it in a bread machine but I haven’t tried it that way so no idea how well it will work. Of course if you’re using a bread machine, you’ll need to start with flour not grain. The amount would remain the same. Technically, these rolls are far too dense to be burger buns but we only seem to eat very dense bread so it didn’t bother us.

Wheat, oat and honey rolls
460g wheat grain
40g oats
350ml lukewarm water
30ml honey, warmed so it’s thin to mix
10ml olive oil
1 sachet yeast
1 tsp salt

In the thermomix, mill wheat grain for 2 minutes on speed 10. Remove from thermomix and stir through oats. Put water, honey, yeast and salt in thermomix and mix for 10 seconds on speed 4. Add flour and oats and knead for 3 minutes. Leave to prove for half an hour then form into rolls. Leave to prove until rolls have doubled in size. Bake at 200 degrees for about 20 minutes.

Bacon and blue cheese burgers.

400g mince beef
1 egg
1/2 cup breadcrumbs
50g blue brie, cut into small pieces
50g sharp, crumbly blue (like a Danish blue or gorgonzola)
1 rasher bacon per person
lettuce
tomato, sliced
red onion, sliced
mayonnaise
season to taste

Thoroughly mix all ingredients and form into patties. Refrigerate until ready to cook. I got 7 patties out of this. Cook patties on frypan or BBQ. Fry bacon until crispy. Spread mayo on rolls and top with patty, bacon, lettuce, red onion and tomato. I used the leftover roasted garlic and walnut mayo from the colourful vegetable salad.
