As usual, we’re out of bread. I rather fancy something pita like for lunches tomorrow so I thought I would see what I could devise in the thermomix.
Thermomix Oat & Spelt Pita Bread
4 1/2 cups freshly ground spelt flour (wheat would work but would probably need a fraction more water)
2 cups oats
7g dried yeast
1 heaped teaspoon salt
1 heaped teaspoon rapadura
2 1/4 cups warm water
2 tablespoons oil
Mix dry ingredients for 10 seconds on speed 5. Add water and oil and mix for 10 seconds on speed 6. If at this stage it is still quite wet, gradually add a little more flour or oats until it forms a firm dough. Knead for 3 minutes. Remove from thermomix bowl.
Knead by hand for another couple of minutes. Cover with clean cloth and leave for 20 minutes. Knock down dough and divide into 4. Divide each piece into 2 pieces. Shape eachpiece into a ball and roll out into a circle about 1/8 inch thick. Cover and leave to rise for about 30 minutes. This makes 8 large pita breads or you can divide further and make small ones.
Preheat oven as hot as it will go.
Bake each piece on the bottom shelf for about 5 minutes or until bread puffs and browns slightly on top.
