I read somewhere that the perfect meat to fat ratio for sausages is 70:30. I thought I’d try and skimp slightly on that with these because of the oiliness of the pesto (and the rogue 2kg I need to lose before the Bread Winner’s Christmas Party on the 13th). Not a good idea. The flavour was great but the snags were just a tad too dry. I should have thrown some suet in as well. I had some in the fridge too. I could have just run a couple of k’s more to balance it all out. Oh well, lesson learned. It was good practice at stuffing too. I only had a couple of little breaks in the casing.

For what it’s worth, I used a kilogram of topside and 200g rocket pesto.
