Absolute serendipity once again. A beautifully harmonious blend of things left in the fridge. Made in the thermomix. Could be made almost as quickly using a food processor to chopa nd a saucepan to cook. Messier though. Love my thermomix.
Carrot, Chickpea and Ginger Soup
1 salad onion
1 shallot
3 cloves garlic
6 carrots, roughly chopped
1 1/2 cups chickpeas, pre-soaked
4 tablespoons tomato paste
1 1/2 cups chicken stock
1 cup water
1/2 cup orange juice
Chop and saute onion, shallot and garlic. If using thermomix, throw every thing else in and chop for 10 seconds on speed 7. Then cook at 100 degrees, speed 3 for 15 minutes. Otherwise, for conventional cooking, process carrot and chickpea until grated consistency, put it all in a pot, bring to boil and simmer for 15 minutes.
Serve with a dollop of natural yoghurt.
