Individual Baked Breakfasts
for 2, multiply out for more people
2 rashers bacon, rind removed
10 baby spinach leaves
2 mushrooms sliced
2 slices tomato
4 eggs
seasoning
a little crumbled feta
2 tablespoons cream
Line individual ramekins with bacon. Layer other ingredients in the centre in the order listed. Bake in a preheated moderate oven for 15 – 20 minutes or until eggs are cooked as much as you want them to be. Serve with toast.

Not so much mojo as a need for sustenance LOL. BW tries but cooking just ain’t his bag baby.
Perfect for a cold wet morning which is what we’ve been getting all weekend. Actually I’d happiliy omit the meat and ramp up the spinach.
