Just to force some more disliked orange veg down the family’s collective throat. I’m on a winner with this one though, they all love it. The Bread Winner looked quite surprised when I told him what he was eating. Of course I didn’t tell him until after he told me that he was really enjoying it. I’m not stupid.
Carrot Fritters.

2 tablespoons plain flour
2 teaspoons ground cumin
1 clove garlic, crushed
2 tablespoons chopped parsley
3 spring onions, thinly sliced
2 eggs, lightly beaten
3 carrots
2 tablespoons olive oil
2 spring onions, thinly sliced length ways to garnish
yoghurt to serve
For thermomix users:
Place rough chopped carrots in thermomix. Chop for 20 seconds on speed 4 and then pulse until desired consistency (I pulsed 4 times). Remove from bowl.
Place flour, eggs, cumin, garlic, parsley and springonions in thermomix bowl. Chop for 5 seconds on speed 7. Combine with carrots.
Heat oil in a large fry pan over medium heat. Fry up as fritters with 1/4 cup to each fritter. Cook in batches for 3 minutes each side until golden.
Serve topped with yoghurt and garnished with spring onions.
For conventional cooks:
Combine flour, cumin, garlic, parsley and spring onions in a large bowl. Add eggs. Mix well to combine
Coarsely grate carrots. Squeeze out excess moisture. Add to egg mixture. Season.
Heat oil in a large fry pan over medium heat. Fry up as fritters with 1/4 cup to each fritter. Cook in batches for 3 minutes each side until golden.
Serve topped with yoghurt and garnished with spring onions.
Approx. 80c per serve
But of course nor am I. You only do that when it’s carrot – dead giveaway! And of course, if it tastes good and it’s good for you, who cares what it is? Unless of course it’s cooked carrot.
