When the Ankle Biters insist on rising at 4.30am and I have to spend three hours of the morning in the pool, I tend to run a little short of energy in the afternoon. Even more so when I cut the tip off my finger and bleed like a stuck pig for hours on end. I’ve got to stop doing that. It makes it hard to type.
So long story short, I couldn’t be stuffed baking today but still needed to churn out lunch for the working and kinder contingent. I came up with this little number. It gets my stamp of approval and that of Son and Heir.
Red Quinoa and Tuna Salad.
individual serve
1/2 cup quinoa
95g tin tuna in springwater
1 carrot, grated
1 tomato, diced
1/4 red capsicum, diced
8 green olives, halved
1 tablespoon pesto
Place quinoa and 1 cup water in a saucepan and bring to boil. Simmer until all the water has been absorbed. Toss all ingredients together.
Too easy.
Great idea – we use lots of quinoa for salads and this looks really good.
Hope that’s 1/4 red capsicum rather than 14 – that would be very red.
