I mentioned yesterday that I whipped up a potato salad for our Cup Day BBQ. I thought I’d share the recipe with you. There are so many wonderful versions of potato salad and this is one of my favourites
Potato and Olive Salad
8 – 10 small potatoes
1/3 cup homemade mayonnaise
1/4 cup roughly chopped stuffed olives
2 rashers bacon, fried until crisp and chopped into small pieces
snipped chives
- Steam potatoes until just tender. Allow to cool slightly
- Cut into large dices (roughly quarters)
- Toss everything together while potatoes are still warm
- Serve warm or at room temperature
I love potato salad warm. It reminds me of my Year 12 days where my friend and I would go home afterschool each day to her place and make up warm potato salad and feast on it whilst studying or chatting. My version is identical to yours except I add a good dollop of seeded mustard to mine. 🙂
This is one of my fave fixes of late (along with the broad bean and feta fetish). Isn’t it wonnerful? I actually must do it with homemade mayo, becuase there is nothing quite so divine is there? I get lazy and do a yoghurt with olive oil, olives and herb dressing. It’s very nice…but, well, mayo! Nothing compares, really.
btw – what taties do you favour for your tatie salad? I never seem to get this right. I tend to resort to Nicola spuds for everything potato-ish and I realise that there is a flaw in my logic.

Docwitch I’m still hung up on the broad bean and feta thing too. Had it yesterday for lunch in fact. Definitely go the homemade mayo, nothing compares. I used a mixture of nicola and royal blue for that particular salad. I need to get more precise with my potatie picks. This combo worked well though.
